JOB DESCRIPTION
Summary
The Lead position performs the cooking
of various meat products under the supervision and direction of the Pit Supervisor. The Lead manages the job in absence of the
Supervisor and ensures compliance with all regulations and policies.
Essential Functions

Performs
the loading of raw meat product onto racks located inside the pitsPerforms
the unloading of cooked meat product out of the pits and onto racksTransports
racks full of meat from pits to the scale, and then to the chill cellPerforms
the cleaning/washing down of a pitAssembles
and disassembles the racks inside the pitsPerforms
daily inspection of the bushings, pins and washers on the racksDetermines
the readiness of cooked meat product by visual inspection and temperature
verificationMust have
knowledge of the product specificationsMust be
familiar with operating in the Rub and Ross systemsMust be
able to stand between 2 – 3 hours at a timeMust be
willing to follow all GMPs (Good Manufacturing Practices) of the company which
include but are not limited to: use of a
hair net, use of gloves, use of a company approved frock and rubber boots, no
jewelry, no nail polish or artificial nails, no shorts, no open-toed shoes, no
ripped clothing or rhinestones/glitter on clothing, no chewing gum, candy or
tobacco.
Supervisory Responsibility
Enforces all GMPs by instructing employees in the department
to follow guidelines and correcting them when neededMakes production-related decisions in the absence of the
SupervisorReports violations of company policy and employee
issues/concerns to the SupervisorTrains new employees to learn the essential functions of
their job

Work Environment
While performing the duties of
this job, the employee is frequently exposed to hot temperatures as high as 120
degrees Fahrenheit. The employee is also
exposed to high levels of smoke produced by the burning wood. The floors in the environment are often wet
and/or greasy and can be slippery.

The employee will frequently
handle both cold and hot meat products (protective gloves are provided)
Position Type/Expected Hours of Work
This is a full-time
position. 40+ hours per week.
Hours of work: Monday through
Friday, 1st shift start time - 5:00 am, 2nd shift start
time – 11:00 am Finish time varies depending on workload. 10 – 12 hour work days are common. Weekends and overtime hours are often
required. Schedule is subject to change
with or without advanced notice.
Required Education and Experience
At least 6
months experience as a Cooking Tech 3
Preferred Education and Experience
High
school diploma or GED.Previous
experience cooking meat or working in a manufacturing environment
Additional Eligibility Qualifications
HACCP
certified in CCPs
Work Authorization
Proof of identity and
authorization to work in the United States is required for this position.
