We have an incredible opportunity for a dynamic, inspirational leader to join our New York Unit as our Purchasing Manager.

Responsibilities: 

 

  • Manage and develop existing team of buying and receiving. Develop and streamline processes for e.g., accessibility, availability, cost, and quality assurance.
  • Manage day-to-day supplier communications to establish and negotiate agreements and maintain business relationships with the established supplier to assure on-time delivery, favorable pricing, capacity allocation, and purchase terms.
  • Create and monitor reports with variable year and seasonality prices input to come up with most cost-effective high-end menus together with corporate executive chefs.     
  • Analyze purchasing and financial data in conjunction with the Unit Controller for opportunities including supplier rationalization, tenders, aggregation, and specification alternatives.
  • Monitor and resolve supplier performance and business issues that may occur to ensure food safety compliance, HACCP regulations, and FDA regulations.
  • Establish cross-functional sourcing targets such as redesign improvements, material, and process standardization.
  • Measure food cost percentage and guarantee system for best price / value for products such as: High value fish, meat, poultry, specialties, dairy, fruits, produce and basic F&B supplies.
  • Develop sourcing plans and budgets, track results as necessary to meet contract obligations.
  • Review Purchase requisitions, obtain competitive quotes and plan purchase orders.
  • Maintain contracts and assist in food presentations and develop in conjunction with management and manage pricing structure to meet food cost goals.
  • Attending food tasting sessions for new products. Participate in establishing policies and procedures.
  • Track and report key functional metrics to reduce expenses and improve effectiveness.
  • Partner with stakeholders to ensure clear requirements documentation.
  • Forecast price and market trends to identify changes of balance in buyer-supplier power.
  • Perform cost and scenario analysis, and benchmarking.
  • Monitor and forecast upcoming levels of demand.
  • Assess, manage, and minimize risks.
  • Other projects as assigned.

 

Qualifications:

 

  • Awareness of the operational sequences.
  • Strong and effective communication skills, with the ability to clearly and concisely express ideas both verbally and in writing.
  • Proactive, entrepreneurial, can operate resourcefully in a fast-paced, dynamic environment.
  • Highly organized and diligent, with attention to detail and follow through.
  • Ability to effectively deal with department heads and team members, some of whom will require high levels of patience, tact, and diplomacy.
  • Ability to work well within a team as well as independently.
  • Planning, co-ordination, good communication and leadership skills
  • Proficient in using Microsoft: Word, Excel, Outlook, MS Navision, and purchasing software preferred.
  • Contract and negotiation skills.
  • Hazard Analysis Critical Control Point (HACCP) knowledge required.
  • Ability to work well in a fast-paced environment and with a diverse clientele that requires a hands-on approach to our guests’ needs.
  • Ability to complete assigned tasks within the given time to meet strict deadlines.
  • Flexibility (different shifts - night, weekends, holidays.)
  • Three (3) to five (5) years in related purchasing field, knowledge of institutional and contract food and beverage purchasing.
  • Proficient computer skills (Particularly Microsoft Word, Excel, Outlook, etc.)
  • Bachelor's Degree in relevant field.
